Shepard's Pie


Why it works: Does a meat and potatoes dish ever go wrong?


Yield: 6 individual pies

  • Ramekin

  • Cast Iron

  • Spat

  • Piping Bag

  • Saute pan


Ingredients:

  • Filling

    • 16 ounces Ground Lamb meat

    • Onion

    • 6 clove garlic

    • Tomato Paste

    • Mushroom soy sauce

    • Salt

    • Black pepper

    • Fresh ground fennel seed

    • 1 can Guinness

  • Mash

    • 4 large Yukon Golds (skin on)

    • Butter

    • Whole Milk

    • Salt

  • Topping

    • Queso Chihuahua

    • Flatleaf Parsley


Instructions:

  1. Defrost meat, small dice onion,

  2. Start simmering whole potatoes in cold salted water. ( Bringing it up from cold keeps the outside from overcooking compared to the inside of the potato. Keeping the skin on will prevent the potatoes from becoming water logged.

  3. As potatoes are simmering, mix ground lamb meat with ground black pepper and ground fennel seed. Roll into 1" meat balls, and sear in lightly oiled saute pan. Once outside it brown, remove lamb and
