Seattle Omelet (Northern Exposure)

Smoked salmon and cream cheese, two ingredients that make anything “Seattle Style”. We’ve taken it way past bagels, baby.


Why it works:

Smoked Salmon and cream cheese is one the PNW's biggest hits.

Yield: 2 portions

Time: 30 minutes

Pairing: Hashbrowns, Toast with Jam.

Equipment:

Stick blender

  • Flat top Griddle

  • Large pot

  • Cinque

  • Cutting board + Chef knife


Ingredients:

  • Omelet

  • Butter

  • 12 eggs

  • Smoked salmon

  • Cream cheese

  • 1 stalk green onion

  • Hash browns Bed

  • 2 cups Russet potatoes

  • Poaching water

  • Potato starch

  • S and P

  • Toast

  • 2 slices Sourdough bread

  • Marionberry jam


Directions.

Crack 12 eggs into a pourable container, add salt and pepper, and blend with a stick blender. 

  • Whip cream cheese and hold in container

  • Cut green onion, greens and white, into biased dice

  • Wash and grate russet potatoes
