Ingredients:
1 pound squid
2 jalapeno
2 white onions
Egg White
Sesame Oil
Corn Starch
Breading

Cornstarch
Peanut oil Instructions: Break down Squid into Tubes and Tentacles, cut tubes into rings.
Velvet Squid in Egg white , cornstarch, sesame oil and salt.
Heat Oil in work to 350
MES Jalapeno and onion. Small dice Jalapeno, and cut white onion into a strips pole to pole.
Bread squid lighly in dredge mixture.
Fry squid until light brown. Remove to paper towel.
Remove oil from wok. Leaving a tablespoon in bottom.
Add Jalapeno and onion to wok, and stir fry to season the oil.
Add Squid back and stir fry to season. Plating instructions:
