Salt and Pepper Squid

The Spiciness of the Jalapeno and the savory of the onion creates a wonderful sauce-like glaze.

Equipment:

  • Wok

  • Wok Spat


Ingredients:

  • 1 pound squid

  • 2 jalapeno

  • 2 white onions

  • Egg White

  • Sesame Oil

  • Corn Starch

  • Breading

    • Panko

    • Cornstarch


  • Peanut oil Instructions: Break down Squid into Tubes and Tentacles, cut tubes into rings.

  • Velvet Squid in Egg white , cornstarch, sesame oil and salt.

  • Heat Oil in work to 350

  • MES Jalapeno and onion. Small dice Jalapeno, and cut white onion into a strips pole to pole.

  • Bread squid lighly in dredge mixture.

  • Fry squid until light brown. Remove to paper towel.

  • Remove oil from wok. Leaving a tablespoon in bottom.

  • Add Jalapeno and onion to wok, and stir fry to season the oil.

  • Add Squid back and stir fry to season. Plating instructions:
