Popcorn Chicken

90's fav! Totally Radical! Boneless white meat! What was your favorite KFC, Sonic, or something else? What is the difference between nuggets and popcorn chicken? (TEXTURE) How do you serve it? Does it have to be chicken breast? should it have a dipping sauce? Basically the porn to the art of all fried chicken. Hard to define, but you know it when you see it. Also it's got to have tits.


Why it works: No dipping sauce (I know, I know, but we need to distinguish this from chicken nuggets). You should just be able to "pop" it into your mouth from a tall cone or cup. Shitake Juice, as the marinade helps keep it light and flavorful. The batter, with a slight panko "shag" helps this go quick with a great texture.


Yield: 12 oz. portion.

Time: 1 hour marinade, 1 hour cook

Equipment:

  • Deep Fryer with peanut oil


Ingredients:

  • 2 - 6 ounce Chicken Breast (.5 inch dice, irregular rectangles or triangles are better than cubes) (Remove any fat)

  • Marinade

    • 1 cup Dried Shitakes

    • 2 cups warm water

    • 1 Table Salt

  • Batter

    • 1/4 cup AP flour

    • 1/4 cup Cornstarch

    • 1/2 cup water

    • 2 Table Salt

    • 1 Tea MSG

  • Crunch Shaggin'

    • 1/2 cup AP flour

    • 2 tablespoons Panko

  • Final Seasoning

    • 1/2 table Chicken powder

    • 1/2 table Fresh Cayenne pepper

    • 1/2 table Onion Powder

    • 1/2 table Garlic Powder


Instructions:

  1. Begin soaking the dehydrated shitakes in warm water.

  2. Dice chicken into 1/2 inch pieces.

  3. Marinade chicken for 1 hour

  4. Make batter, make shag. make dust

  5. Heat oil to 350

  6. Remove chicken from marinade, place all in to batter, remove 1 at a time and coat with shag. Fry until it floats. Remove to a drain pan

  7. Dust with final seasoning will still hot


Plating Instructions

  1. Serve in a paper cone or cup
