Pan Seared Bone-In Pork Chop w/ Mashed sweet potatoes and Apple Cream sauce.

A classic one pan dish. A great place to start cooking if you don't have much experience. A great date night / weeknight recipe that keeps. Show

  • Cast Iron Skillet

  • Drain tray

Ingredients:

1 bone in 12 oz. pork rib chop

Dry rub

Salt

Black pepper

Coriander

2 table sugar

brown mustard seed


1 tablespoon Canola Oil

1 tablespoon butter

1 spring rosemary


2 large yams

Butter

Milk

Salt and Pepp

er


Rice flour

Shallots

Apples

Heavy Cream


Sage

Dehydrated apple ribbon slices. Instructions:

  1. Have

  2. Peel cut and simmer yams in salt water until tender

  3. Heat oil to smoking on Cast Iron

  4. Pat pork chops dry, season with seasoning mix from up top, get to room temp. They are big, so any leftover cold will keep them from getting to 140-150

  5. Sear pork chops with 4 minutes a side, and 2 minutes on fat cap, place on rack to rest for 5

  6. Pour out excess oil, leaving fond.

  7. Sauté shallots and apples

  8. Deglace with Brandy, ignite, put out with cream and cream

  9. Reduce, and season.

  10. Mash potatoes with butter, milk and season

  11. Carve pork

  12. Plate, mash, sauce, Proteins, Garnish.
