1 bone in 12 oz. pork rib chop
Dry rub

1 tablespoon Canola Oil
1 tablespoon butter
1 spring rosemary
2 large yams

Shallots
Apples

Dehydrated apple ribbon slices. Instructions:
Have
Peel cut and simmer yams in salt water until tender
Heat oil to smoking on Cast Iron
Pat pork chops dry, season with seasoning mix from up top, get to room temp. They are big, so any leftover cold will keep them from getting to 140-150
Sear pork chops with 4 minutes a side, and 2 minutes on fat cap, place on rack to rest for 5
Pour out excess oil, leaving fond.
Sauté shallots and apples
Deglace with Brandy, ignite, put out with cream and cream
Reduce, and season.
Mash potatoes with butter, milk and season
Carve pork
Plate, mash, sauce, Proteins, Garnish.
