4 skinless Grouper filets
3 stage Dredge
1/4 cup Corn starch
2 Eggs
Panko / bread crumbs
1 cup AP flour
1/4 cup corn starch
½ cup panko
1 tea baking powder
1 table salt
1 table Onion powder
1 table Garlic powder
1 tea dried Parsley
Garnish
Fresh Lemon
Instructions: Skin fish is needed
Dredge in cornstarch and place on wire rack for 15-20 minutes
Build egg wash and second breading, let sit for 5-10 minutes to have breading stick
HEAT OIL to 350

Tasting Notes: The fish was overdone, and under seasoned. The flesh of the fish needed salt, and the corn starch made it bind well, but had a chalky taste.
