Fried Grouper

Tampa! Three stage breading! What not to love?


Why it works: No corn in Florida, what about left over Cuban bread?

  • Mixing Bowl


Ingredients:

  • 4 skinless Grouper filets

  • 3 stage Dredge

  • 1/4 cup Corn starch

  • 2 Eggs

  • Panko / bread crumbs

  • 1 cup AP flour

  • 1/4 cup corn starch

  • ½ cup panko

  • 1 tea baking powder

  • 1 table salt

  • 1 table Onion powder

  • 1 table Garlic powder

  • 1 tea dried Parsley

  • Garnish

  • Fresh Lemon

Instructions: Skin fish is needed

  • Dredge in cornstarch and place on wire rack for 15-20 minutes

  • Build egg wash and second breading, let sit for 5-10 minutes to have breading stick

  • HEAT OIL to 350

Tasting Notes: The fish was overdone, and under seasoned. The flesh of the fish needed salt, and the corn starch made it bind well, but had a chalky taste.
