Ingredients:
Parmesan Reggiano
1/4 cup Salt
3 tablespoons Butter
1 tablespoon Black Pepper
4 oz. Pasta (Fettuccini, Fusilli)
2 cups pasta water
Instructions:
Bring salted water to boil
Blend Cheese to fluffy crumb
Boil pasta to a dente
reserve 2 cups pasta water
put pasta back in pot, add handful of cheese, 1 tablespoons of butter, 1 pinch black pepper
Fold to consistency.
Continue until all cheese is used, adding water to thin out sauce.
