The numbing sensation (Mala) of the Szechuan peppercorn, the bitterness of the beans, crunch and juiciness of the chicken!

Time: 1 hour

  • Wok

  • Wok Spat

  • Bowl for marinade


Ingredients:

  • Green Beans

  • Marinade

    • Dark Soy Sauce

    • Shaoxing wine

    • Egg whites

    • Sugar

  • Dredge

    • Cornstarch

    • Salt

    • Szeuchan pepper corn

    • cayenne pepper

  • Spice Mix

    • Szechuan peppercorn

    • ginger

    • Garlic

    • Scallion

    • árbol Peppers

  • Peanut oil


Instructions:

  1. Marinade / Silk Chicken

  2. Dredge

  3. Heat oil in wok, fry

  4. Remove excess oil

  5. Stir fry spices

  6. Add Green Beans

  7. Add Chicken

  8. Plate.


Plating Instructions

Make sure this isn't too oily, pile up high in the center of the plate.
